home made sorbet

home made sorbet

From time to time I take photos for my wife to use in her blogging. This one is of a very good peach sorbet that she created from scratch.

If you are interested, here is her posting of the recipe.

Easy Stromboli Recipe

Easy Stromboli Recipe

For a delicious variation on pizza, roll up favorite Italian ingredients in a Pillsbury pizza crust.

1/2 lb. lean ground beef
1 (13.8-oz.) can Pillsbury® refrigerated classic pizza crust
1/4 cup pizza sauce
4 oz. (1 cup) shredded mozzarella cheese
1/4 cup chopped green and/or red bell pepper, if desired
1/4 teaspoon dried Italian seasoning

1.Heat oven to 400°F. Spray cookie sheet with nonstick cooking spray. Brown ground beef in medium skillet over medium-high heat until thoroughly cooked, stirring frequently. Drain. Set aside.

2.Unroll dough; place on sprayed cookie sheet. Starting at center, press out dough with hands to form 12×8-inch rectangle.

3.Spread sauce over dough to within 2 inches of long sides and 1/2 inch of short sides. Place cooked ground beef lengthwise down center, forming 3-inch-wide strip and to within 1/2 inch of short sides. Top with cheese, bell pepper and Italian seasoning. Fold long sides of dough over filling; press edges to seal.

4.Bake at 400°F. for 15 to 20 minutes or until crust is golden brown.

Mixed Berries with Limoncello on Lemon Yogurt Cake

Mixed Berries with Limoncello on Lemon Yogurt Cake

My mom gave me a bottle of Limoncello (lemon liquor from Italy) when I visited her a few weeks ago, and ever since I’ve been trying to think of something to do with it. The limoncello is sweet, not tart like you would expect, and it smells like fresh lemons. It also has quite a kick!

Over the weekend I saw Giada make Mixed Berries with Limoncello on Food Network and thought it sounded great. And what better to go with it than Ina Garten’s Lemon Yogurt Cake?

So here they are together, and boy were they delicious! Both recipes were easy to make. The Lemon Yogurt Cake is moist with fresh lemon flavors. The tart berries were a great compliment to the cake, but the fresh mint and light coating of limoncello really put it over the top. All together, it was light and refreshing, a perfect warm weather dessert. Plus, it’s fresh fruit and the cake is made with yogurt (no butter!), so it’s practically health food.
